Coming from Arizona, I respectfully disagree. Stacked enchiladas are the kind of fare I would expect to find at Taco Bell,and your choice of beer (and I have a hard time referring to Coors as beer:),is a poor one. Give me good old authentic,rolled,red or green enchiladas,chicken or beef(and thats shredded not ground) any time...and for beer, make mine a good pale ale. Now THATS, good meskin food with a real beer to wash it down with:)

I knew it....blue corn was the give away....the yuppies have invaded northern NM, and shame on them. A real Mexican would snicker at the thought of ground up blue corn in their masa:)

In my travels, I have found a wide difference of opinion as to what is real Mexican fare.
Up where my daughter lives, they are upscale and the burritos are made with black beans...uhg!
For my money, I don't like what I have had in Phoenix, too much chilli rojo, and the salsa is way too bland.
I have pretty much grown up in southern California and that's the mex I like.
We talkin' cervesa? MULE, I can't go along with Coors. Mexicans drink Bud. I happen to like Pacifico and Dos Eques and will not drink Corona.
Now, let's not start another thirteen pages of argument. Suffice it to say, my choice in ethnic food is always Mexican. I could eat it every day, but the trend toward Habaneros is too much for me, I'll stick to Jalapenos fresca. That's what I grow in my garden.

St. Pauli Girl, say, isn't that German for Pacifico????? Those are 2 of my most favoritist flavors. Nummer nums!
Say, what's your favorite kind of cheese? Mine is chi-chis.

You guys are all crazy, drinking "beer". When I drink that stuff, I start getting a headache about the time I start having to piss every 15 minutes and I never do catch any kind of a decent buzz. A bottle or two with dinner is okay I guess, but that's about it.
Whiskey! Now THAT's the ticket! A good straight Bourbon, Irish or single malt Scotch (none of that blended crap...). Ahhh, a nice cigar, a highball glass filled two thirds up with a nice Irish Whiskey sprinkled with chipped ice, damn, it's only 8:30am and my mouth is starting to water...

Now your talkin' Dave! Im not much of a beer drinker either, just nice stuff to wash down a good plate of "real" meskin food. My choice is that of a simple man....three fingers of Jim Beam, with a small handfull of crushed ice does it for me. Mule, keep your several generations of spainards up there in Colorado please. Down here in Arizona we prefer our centuries old Mexican cusine, which did glean some influence from the "men in metal", but have kept it distinctly different from Spanish grub,you know, tapas and sherry. Mexicans were happily using chiles,tomatoes and beans long before the goofs in the metal suits trudged across this continent slaying the indigenous brown people and looking for the lost city of gold:)

When did Coors start making beer? All I've ever seen is that piss-water soda they sell in yellow or silver cans.

A pot of Goose gumbo. Side orders of crawfish etoufee, Catfish sauce pecan, fried gator jaws(Not the tail). Off course boudain balls for apatisers.Chugged down with ice tea. You wont be able to blow a call for three days.

I'm just am amateur, beer is fine for me, rather than a twelve pack a day, it will last me at least twelve days in the summer time. But I just read a bad word, Tecate. Takes the cake for headaches, never had it in a bottle, but a can of Tecate is not drinkable.
Creating the perfect burrito is an art, wet or not. There is a famous establishment in City Terrace, Los Angeles, where you always have to wait outside for a table, called "La Tapia" across the street from a Catholic church. They make a Holenbeck, and the "Manual" burrito which, if you can eat two, they are free. About the size of a small loaf of bread. Lots of beef and green chillis. Refried beens, if you want them. I have watched them make them, a 16" skillet full of beef, chillis and onions stuffed into one burrito. Stays with you all day. God, I want one now! Almost a two beer meal.
I have also sucked a few dozen cajon shrimp smothered in butter and lots of black pepper. Yum. Ever heard of King Cake? Don't eat the baby Jesus.

Yup, Jim Beam is the staple here too! The fancier stuff is for when I'm feeling rich. Which is getting to be just about never.
Ronnie, you just described one HECKUVA meal! I've got a buddy in Laplace that ships me up fresh craw dad etoufee once in awhile. That's some GOOD stuff!
